Ingredients • 1 pack of chilled puff pastry • 3 medium apples • 2 tablespoons brown sugar • 2 tablespoons chopped almonds • 2 tablespoons ground almonds • 2 tablespoons lemon juice • 1 tablespoon BAM Strudel & Pie spice blend • ½ teaspoon BAM pepper • a pinch of BAM Himalayan salt • 1 egg yolk + 1 tablespoon milk (for brushing) • sliced almonds (optional, for topping) • powdered sugar (for dusting) Instructions: 1. Prepare the apple filling: Peel the apples, remove the cores and cut them into small pieces. In a large bowl, mix the apples with brown sugar, lemon juice, BAM Strudel & Pie spice blend, BAM pepper and a pinch of BAM Himalayan salt. Add the chopped almonds and gently mix everything together. 2. Prepare the pastry: Roll out the puff pastry on baking paper. Sprinkle the ground almonds evenly over the surface to absorb excess moisture and keep the pastry crispy. 3. Shape the strudel: Spread the apple filling evenly over the bottom third of the pastry. Leave some space at the edges and carefully roll the strudel using the baking paper. Seal the edges well and place the strudel seam-side down on a baking tray. 4. Brush and prepare for baking: Preheat the oven to 200 °C or 180 °C fan-assisted. Mix the egg yolk with the milk. Brush the strudel with the mixture and sprinkle with sliced almonds if desired. 5.
